Ingredients:
120 g butter, softened
75 g packed brown sugar
50 g white sugar
1 egg
1 tsp vanilla extract
80 g all-purpose flour
¼ tsp baking soda
1 tsp ground cinnamon
½ tsp salt
100 g instant oats
50 g raisin, chopped
Methods:”
Preheat the oven to 165 degrees C. In a large bowl, cream together butter, brown sugar, and white sugar until fluffy. Beat in egg, and then stir in the vanilla. Bring together flour, baking soda, salt, and cinnamon then stir into the creamed mixture. Add in oats and raisin, stir until just blended. Drop teaspoonfuls of mixture onto baking tray lined with baking paper. Cookies should be at about 2 inches apart. Bake for about 12 minutes in the preheated oven. Cool cookies on a wire rack then store in an air-tight container.
